Atherton butcher goes ham on debut
ATHERTON butcher Cross Custom Meats have snagged four awards at the 2019 Australian Meat Industry Council’s (AMIC) Queensland Regional Smallgoods Competition.
ATHERTON butcher Cross Custom Meats have snagged four awards at the 2019 Australian Meat Industry Council’s (AMIC) Queensland Regional Smallgoods Competition.
Held in Cairns, the competition pits some of the best butcheries from Townsville north against each other in a blind taste-test judged by industry professionals. Cross Custom Meats came away with the Leg Ham on the Bone, Bacon Rasher, Boneless Leg Ham and Kabana awards. The Tablelands business’s feat is all the more impressive as it was their first time entering.
“We only opened on July 31 of last year, so to come away with four awards is a pretty special feeling,” Cross Custom Meats owner and operator Douglas Cross said.
“I knew I was up against some really strong competition as there are people there who have been doing it for years, however I went there to win it and I’m really pleased we did.
Their win ensures they move onto the state-wide competition to be held at this year’s EKKA in Brisbane in August, where they will be participating in the Royal Queensland Food and Wine Show’s Sausage King, Ham, Bacon and Smallgoods competition.
“I’m really looking forward to going down to Brisbane and depending on how we go down there, we might get the opportunity to participate in the Australian titles later in the year,” Mr Cross said.
Mr Cross took time to thank those who have played in an integral role in the business’ success since it opened just shy of a year ago.
“I would like to take this opportunity to recognise my staff, it wasn’t just me who achieved this – it’s because of the work everyone here puts in every day,” he said.
“I couldn’t do this without them.”
