Easy bake chocolate cake

WE all love a sugar fix and chocolate cake is just the ticket to satisfy that craving, but all of you watching the kilojoules, try this chocolate cake recipe that requires just one egg. It’s also very quick to make.

INGREDIENTS 

  • 50g butter 

  • 1 tbsp golden syrup 

  • 1 egg 

  • ½ cup brown or white sugar 

  • few drops of vanilla essence 

  • 2 tbspn cocoa 

  • 1 cup plain flour 

  • 1 tspn baking powder 

  • 1 tspn baking soda

  •  ¾ cup milk 


METHOD 

Preheat the oven to 190ºC. 

Grease a 20cm shallow round or square tin and line the base with baking paper. 

Melt the butter and golden syrup in a small saucepan and transfer to a mixing bowl. Add the egg, sugar and vanilla and beat well. Sift the cocoa, flour and baking powder together and dissolve the baking soda in the milk. 

Fold the dry ingredients into the mixture alternately with the milk. Pour into the prepared tin. 

Bake for 20 minutes or until the cake springs back when lightly touched. Leave in the tin for 5 minutes before turning out onto a wire rack to cool. 

When cold, make a chocolate, coffee icing by mixing butter or margarine, icing sugar, cocoa and a teaspoon of strong coffee. Spread over the top of the cake and refrigerate.
